The Mexican Invention

In one ovenable dish with lid:

1 amount of chicken
1 amount of canned tomatoes, onions, peppers and other interesting veg.
1 amount of taco/fajita spice
1 handful of finest cheddar
1 sprinkle of jalapeños

Whack in the oven, spread evenly in the dish covered in all the sauces+spices you like, lid on – wait 2 hours @ an average temperature.

Eat in some wraps, or with rice, add extra cheese / salad and enjoy!

I’ve literally just made this recipe up, ive never actually tried it, but im gona find out what it tastes like tonight – as i discovered all of the above ingredients therefore making this a super low cost dinner for 2-4.

    Turned out great – slightly more watery than anticipated – so would probably suggest draining some water first and potentially cooking with open lid in the oven for the last 20 mins or so, make it a bit thicker and juicier.

    Went well with onion rings and fries!

    it WAS good… though comparatively expensive compared to the “bits i found in the cupboard because i had no food at all” chilli con carne i just whipped up. total cost = £0.00
